Writeup: Double Chocolate Chip Cookies

Saturday, August 31, 2013 – In the last 4.5 years, I’ve made a lot of chocolate chip cookies. But this is the first time I’ve made double chocolate cookies. (Or hell, the first time I’ve made chocolate cookies.)

So why double chocolate and why now? Well, I originally made honey cookies for the PAX Cookie Brigade. But PAXers have very simple tastes. Honey cookies weren’t very popular, but chocolate chip cookies are super popular. But I didn’t want to make regular plain old chocolate chip cookies. So I decided to learn how to make double chocolate cookies.

And by learn, I mean improvise. I took my standard chocolate chip cookie recipe (or the latest iteration anyway) and added 40g cocoa powder.

As it turns out, cocoa powder makes the dough much thicker and inhibits spreading, almost like a flour substitute. I’m not sure if cocoa powder can be substituted for flour one for one though. For the next batch, I kept 40g cocoa powder, but reduced the flour by 20g. Still seems like a normal cookie.

I could try one for one substitution, but I’m out of days in PAX. Gonna have to postpone this for more cookie experiments.

Also, the double chocolate cookie dough tastes kind of gingery. Baked goods are weird. (Most of the taste still comes from the chocolate chips though.)
