Dinner with the Family, Holidays 2013

It hasn’t actually happened yet, but I’m using this post to brainstorm ideas and figure out what I want to make, and to record these thoughts for posterity.

Appetizer: Grilled Lettuce Salad

Grilled lettuce, sliced pears, gorgonzola, balsamic vinaigrette.

Option 1: Beef and Onion Stirfry

Beef and onion stirfry. Served with rice. Steamed cabbage optional. (Steamed broccoli is another possibility.)

Option 2: Sauteed Chicken with a Port-Madeira-Balsamic Sauce

Sauteed chicken with a pan sauce made with Port, Madeira, and Balsamic vinaigrette. The sauce is slightly sweet. Best served over rice or potatoes.

Option 3: Sauteed Chicken with Bechamel Sauce

Sauteed chicken with Bechamel sauce. Bechamel sauce is made from butter, flour, and melted cheese. Best served with steamed broccoli or cauliflower and a side of bread.

Option 4: Sun-dried Tomato Pesto Fettuccine with Seared Top Loin Steak

Sun-dried tomato pesto, thinned with cream, served over fettuccine. The protein can be substituted with chicken.
